Belgian Waffles

 Ellie is bound and determined that weekends are for yummy breakfasts.  We have been trying out a lot of recipes lately and have decided that Belgian Waffles are one of the best.  We usually make these on snowy days when you just need an extra warm hug.  They make Ellie and everyone happy.

2 1/4 C. Flour

1 T Baking Powder

3 T Sugar

1/2 tsp Salt

2 Large Eggs

1/2 C. Canola Oil

2 C. Milk\

1 tsp Vanilla

Preheat your waffle iron, In a large bowl whisk together the flour, baking powder, sugar, and salt.  Add egg yokes, (put egg whites in a small bowl to whisk) Canola oil, milk, and vanilla. In a small bowl beat the egg whites with a hand mixer until stiff peaks form.  Set aside.  Now mix the other ingredients until there are no lumps.  Fold in egg whites.  Use a scooper or measuring cup to pour the batter into the skillet.  Do according to the manufacturer's directions.  Serve immediately with butter, syrup, powdered sugar, Nutella, whip cream, and strawberries.  There are so many possibilities.  We hope you enjoy!
