Cheesy Enchilada Stack: Pinterest Recipe (5 stars)

I have decided to start making things that I see on Pinterest.  This way I can know if the recipe is worth pinning or not.  I recently pinned this little dish and thought it looked great but wondered how it would taste and how the family would like it.  Turns out this one was a HUGE success.  It really is very tasty.  The site that I got this recipe from looks to have a lot of great recipes.  The site is Chef in Training.  If you are going to pin this please pin it from her site since it is her recipe. 
CHEESY ENCHILADA STACK 
1 lb. Lean ground beef
2 (10 oz) can Red Enchilada Sauce (Our favorite is the Old El Paso brand)
6 (8 inch) flour tortillas
1 (8 oz) bag Shredded Cheddar Cheese
1 (16 oz) can refried beans 
2 (4 oz) cans diced green chilies
1 bunch green onions
Cook the beef in a skillet over MED-HIGH heat until well browned. Drain off fat.
Stir 1/2 cup enchilada sauce in the skillet with the beef.  Spray a baking sheet with non-stick cooking spray.
Place 1 tortilla onto the baking sheet.  Top with 1/3 of the beef mixture and 1/4 cup cheese.
Top with 1 tortilla, half the refried beans, 1/2 cup enchilada sauce, 1 can drained green chilies, and 1/4 cup cheese.
Repeat the layers one more time.
Top with 1 tortilla, remaining beef mixture and 1/4 cup cheese.
Top with remaining tortilla.  Cover the stack with aluminum foil.
Bake at 400 F for 40 minutes or until the filling is hot.  Uncover the stack and top with remaining enchilada sauce, cheese and green onion.
Bake 5 more minutes or until the cheese is melted.
Cut the stack into 6 wedges.

Grandma Dorothy's Spectacular Sloppy Joe's

All growing up I had these Sloppy Joe's for dinner. They are the best I have ever had. I use to wonder why people didn't really like Sloppy Joe's until I tried what most people use, from a can. YUCK! They are awful. First off this recipe is so easy so if you ever make Sloppy Joe's from a can again then shame on you. Haha Second, it will change your view on the Joe. They are actually really yummy. My hubby will forever be a changed man thanks to my Grandma and her yummy Sloppy Joe. I am weird and like to put my potato chips inside of it. My oldest does the same thing.
2 pounds ground beef
1 chopped yellow onion
2 T. flour
1 can (8 ounces) tomato sauce
1 T. dry mustard
1 T. brown sugar
1 T. vinegar
4 T. ketchup
3 t. Worcestershire sauce
salt and paprika

Brown the hamburger and onion. Add remaining ingredients and heat through. Serve on a bun. Add chips for fun;) Enjoy!

Best Burger Ever!

I absolutely love this recipe that I found in Martha Stewart Everyday Foods. I will have to admit I LOVE Martha. Her easy recipe magazine is one of my favorite things ever. It is actually a meatball recipe but who says you always have to follow rules. I thought it might just make a yummy burger and darn it, it is!

I have tested this on very picky eaters,"Men's men", kids, and even women. The consensus is that they all love it.
1 large egg
coarse salt and ground pepper
1 large onion, finely chopped
6 garlic cloves, minced
1/2 cup dried breadcrumbs or oatmeal
3/4 cup finely grated Parmesan cheese
16 ounces hamburger
1 t. Italian seasoning

Mix all ingredients in a large bowl. Roll into balls big enough for a patty and flatten to about 1/2 inch thick. Grill to desired amount.

Toppings for us include green leaf lettuce, tomatoes, purple onion, ketchup, mustard, pickles, mayo(not for me). Toast the bun and enjoy!

Meatloaf

Growing up I can't recall a time that my mom made meatloaf. I am sure she did but she wasn't so into heart stopping food. Me on the other hand has a husband who only likes heart stopping food so I have learned to adapt to his ways. I will have to say some comfort food is so yummy. We started out just making a recipe off of the oatmeal box until my cousin introduced me to her fabulous recipe. Calee came up with an ingenious idea to put it in muffin tins for individual size one. Plus easier cooking and freezing. She is one smart cookie.

3/4 c oats
1 1/2 lb ground beef
1 c tomato juice or 1/2 c catchup
1 egg lightly beaten
1/4 c chopped onion
1/4 tsp pepper
1/4 tsp salt
1/2 tsp garlic powder
3T Worcestershire sauce
1 c cheddar cheese

Combine all ingredients in a large mixing bowl and mix together. I find using my hands is the easiest, most fun way. Then firmly press into a 8 in x 4 in loaf pan or 12 muffin tins. Cook for 1 hour at 350 for the loaf pan and 30-40 minutes with the muffin tins. Drain the grease before serving. Let stand in pan for 5 minutes and Enjoy.

Nana's Lasagna

Okay, so really I think this one should be titled Mom's Lasagna because it is what I had growing up and my mom is the one that always made it for me. I love this Lasagna. It is not to complicated and it tastes great. It is a nice meal to take to someone as well. I like dinners that you can make for someone and leave it in their fridge all day. It gives me options.

Meat Sauce:

1 lb ground beef
1 large onion chopped
1 clove minced garlic
1/2 tsp. basil
2 cups tomatoes, diced
1 can tomato paste. (6 ounces)
1 can tomato sauce (8 ounces)
1/2 tsp. salt
1/4 tsp. pepper

Brwon the meat and onion. Remove fat. Add remaining ingredients and simmer for 45 minutes-1hour.

Cheese filling:

2 cartons cottage cheese
2 beaten eggs
1 T. parsley flakes
1/2 tsp. salt
1/2 tsp pepper
1 lb Mozzarella Cheese sliced or shredded

Cook Noodles (1/2 package) according to package directions. Meanwhile combine cheese filling except Mozzarella cheese. Grease 9 x13 baking dish and spread half of the noodles on the bottom, then half the cheese mixture. Pour on 1/2 of the meat sauce. Sprinkle with half the Mozzarella cheese. Repeat. Bake at 350 degrees for 30 minutes. Enjoy!

Spaghetti with Meatballs

This recipe I found in one of Martha Stewart's Everyday Food. If you don't have any of these magazines you should! They are the best. There is at least one recipe I have liked in each issue. I stopped buying them because I have about 20. This recipe is super easy and yummy! I am not a fan of Ragu or Prego but I understand how nice it is to whip up an easy dinner. This is almost as easy. Especially if you have pre-made meatballs. This is the same recipe that I use for my hamburgers. Whenever I make my hamburger's I always make a little extra so I can make some meatballs to go with my spaghetti. I put the actually Martha recipe on this but I don't do everything she does. *To see my easier version go to the bottom.

Meatballs:

1 large egg
1/4 c water
1 tsp. salt
1/4 tsp pepper
1 large onion, finely chopped
3 garlic cloves, minced
1/2 cup plain dried breadcrumbs or oats
3/4 cup Parmesan cheese, plus more for serving.
1 lb hamburger. (you can also use ground pork and ground turkey)
1/2 tsp. Italian seasoning.
2 T. olive oil

In a large bowl, whisk together egg, 1/4 cup water, 1 tsp salt, and 1/4 tsp pepper. Stir in half the onion and half the garlic. Add breadcrumbs, cheese, meat, and Italian seasoning. Mix together. Roll into golf ball size balls. (If you have time chill for 1/2 hour to help them keep their shape.)

Heat 1 T oil in a large non-stick skillet over medium high heat. Add half the meatballs; brown on all sides, 4-6 minutes. Transfer to a plate with a slotted spoon. Cook remaining meatballs in remaining 1 T. oil; remove the meatballs.

Now for the sauce:

1 can (28 ounces) crushed tomatoes
1/2 tsp. Italian seasoning
3 garlic cloves, minced
rest of the onion

In the same pan add remaining onions, cook over medium low heat until soft, about 5 minutes. Add garlic and Italian seasoning; cook 30 seconds. Season with salt an pepper. Stir in tomatoes and 3/4 cup water. Return meatballs; cover, and simmer until cooked through, about 20 minutes. Remove meatballs.

3/4 pound spaghetti.

Meanwhile, in a large pot of boiling water cook spaghetti according to package directions until al dente. Drain; return to pot. Toss with sauce; serve meatballs on top, sprinkle with more cheese.

*I follow the meatball recipe, but I double it. I freeze the ones I don't think we will eat. I cook them and everything before I freeze them.

I a large sauce pan pour in the crush tomatoes. add the Italian seasoning, garlic. Don't bother with the onions. (unless you REALLY want them) Either get the frozen meatballs or the ones you just made. Salt and pepper to taste. Simmer for about 20 minutes or until frozen meatballs are hot. See what I mean...easy!

Danish Meatballs

My good friend Misty shared this recipe with me. The first time that I made it I really wondered if anyone in my family would like it. Mainly because of the dry dill weed. Turns out I was wrong. Jeron and JJ think it taste like a much better version of Beef Stroganoff.

1 Lb. hamburger
1/2 Lb. lean ground pork
1 tsp. salt
1/8 tsp pepper
1 egg slightly beaten
1 T grated onion
1/4 C half and half or milk
1/2 C soft bread crumbs
1/8 tsp All Spice

Combine ingredents and form into balls. Arrange on cookie sheet. Bake at 375 for 20-30 minutes or until browned.

1/4 c butter
1/4 c flour
2 c chicken broth
1/4 tsp salt
2 tsp dry dill weed
1 c sour cream

In a sauce pan, melt butter. Stir in flour. Stir in broth, salt, and dill weed. Cook and stir over med heat until thick. Remove from heat and stir in sour cream. Drain meatballs. Pour over meatballs. Serve on cooked rice. Enjoy!

California Casserole

If you know me you know that I love Mexican food. I could eat it for every meal. The spicier the better. This meal was introduced by my good friend Misty. I told her that I don't have a lot of casserole dishes, so knowing how I love Mexican she knew she had the one for me. My favorite thing about this is it helps me to not waste. You use crushed tortilla chips. Now all those chips at the bottom of the bag now have a useful place.

1 lb. hamburger
1 sm. onion
2 cloves garlic
16 oz. tomato sauce
1 can olives (optional)
1 tsp. salt
1/4 t. cumin

1 c. sour cream
1 c. cottage cheese
1 sm. can green chilies

10 oz. tortilla chips
1 lb. Colby jack cheese
Brown hamburger, onion, and garlic. Drain. Add tomato sauce, olives, salt, and cumin.

In a bowl, combine sour cream, cottage cheese, and green chilies.

Crunch chips and grate cheese

In a greased 9x13 baking dish, layer 1/2 of the chips, meat sauce, sour cream mixture, and cheese. Repeat in same order. Cover with foil and bake at 350 for 45 min. Enjoy!
