Smitty's Nachos


 2-3 cooked bbq chicken

black beans, drained

cilantro

white onion

red pepper

jalapeno

cheese

chipotle tabasco 

whole grain tostitos chips 

Chop the onion, red pepper, jalapeno and cilantro.  Place the chips cup up on the baking sheet. Load with black beans, and all the chopped ingredients.  Sprinkle the chipotle sauce all over.  Then add the chicken and cheese.  Put in the over for 10-15 minutes or until the cheese is melted.    Enjoy

Grilled Tilapia with Capers

I truly have neglected this blog for way to long.  I feel bad because my one fan has been waiting since April to get a new recipe.  I have felt the pressure and finally my ducks are in a row, the stars are aligned, my baby is asleep, my other three are at school, and my spunky 4 year old is safely swimming in the bath.  It is perfect time to get a blog post done.  I must hurry though because before long life will be CRAZY again.

 My mom had us over for dinner and made a new recipe. Grilled Tilapia with capers.  It was heavenly.  Her and my Uncle Carl decided to try something new.  Apparently Carl really wanted tilapia with capers so my mom got on her trusty computer and together they came up with a fabulous dinner.  We also had mango and coconut rice.  The two went together so well.  They make me laugh when they work together.  They still act silly even at their age.  They tease each other like brother and sister do.  I am glad Carl was there so that mom would try something so different.  It is one of my new favorite dishes.  

4 Tilapia fillet
3 T Olive Oil
1 lemon finely zested
2 lemons juiced
1/2 C dry white wine
1 shallot thinly sliced
Splash of heavy cream
1 stick of butter cut in cubes
1/4 C Fresh Parsley
1/4 C drained capers
black pepper
salt


Heat grill to high.  Brush fish on both sides with olive oil.  Season with salt and pepper.  Cook 3-4 minutes per side or until lightly golden brown and slightly charred. 

Combine shallots, lemon juice and zest, white wine in a small sauce pan on high heat.  Cook until reduced by half.  Remove from heat and let cool.  Whisk together the cream, butter, and wine mixture in a small bowl and season with salt and pepper.  Add the parsley and capers.  Stir.  Serve over the Tilapia.  Enjoy!

Southwest Chicken Taco's

 Last year I went to a ladies weekend getaway and the first night there the girls in charge of dinner served these chicken taco's.  They are delish.  I absolutely fell in love with them and knew I needed to make these for my family.   I was a bit nervous to ask my cute neighbor Nikki for the recipe because I thought it might just be really complicated.  Was I wrong!   It is the simplest recipe and it tastes amazing.  Plus, my entire family loves it.  My seven year old had two.  Even the picky eater ate hers all gone. 
 3 boneless skinless chicken breasts
1 can Mexican Style Stewed tomatoes
1/4 cup brown sugar
1/2 tsp red pepper flakes

Combine all the ingredients into the crock pot and cook on high for 4 hours.  After it is finished cooking shred the chicken with a fork.  It serves a family of 6. 
Seriously could this recipe be any easier.  We serve this taco style of course.  You can do any ingredients you want.  Here are some we do. 

cheddar cheese
pico
guacamole
lettuce
black beans
corn
Tortilla

Put it all together and Enjoy.

Sweet and Sour Chicken

This is a recipe that comes from my moms kitchen. She really has the best recipes so whenever I go to her recipe book I know that I will pull out a good one. This recipe is a bit time consuming but well worth the effort. This is a HUGE family favorite. Even the little ladies like it. (I do serve theirs without the sauce)
1/2 cup flour
1/4 cup corn starch
1 tsp salt
1/2 tsp baking powder
1/2 tsp canola oil
1/2 cup water
1/2 pound chicken cut in bite size pieces
mix dry ingredients then mix with water and oil to make a batter. Dip the chicken pieces in batter. Fry in small amount of canola oil.

Sauce
1/4 cup brown sugar, packed
2 T corn starch
1 can (8 ounces) pineapple tidbits, drain but reserve liquid
1/4 cup vinegar
2 T ketchup
1/4 cup onion, diced
1/4 cup green pepper, diced
1/4 cup celery, diced

In 2 quart sauce pan mix sugar and cornstarch. Add enough water to reserved pineapple juice to measure one cup. Stir syrup mixture, vinegar, and ketchup into cornstarch mixture. Cook and stir constantly until it boils and thickens. Stir in pineapple, onions, green pepper, and celery. Cook until tender. Add chicken and serve over rice. Enjoy

Crock Pot Chicken Parmesan : A pinterest recipe(2 stars)

Chicken Parmesan is one of my husbands favorite meals.  So when I came across a crock pot recipe I thought bonus.  Turns out this one wasn't really a hit in the Snow household.  First off, we like Chicken Parmesan to be crispy.  This is so NOT the case with this one.  The taste was fine but the lack of crispiness was missed immensely.  I am kind of bummed to say this one was a flop.  Now, in a pinch I just might make it again just because it was so easy..  I will just tell my family it is chicken marinara or something like that.  Try it for yourself though and if you liked it please tell me what I did wrong.  ;)   Go check out her site and see if she has better tips than I found.  If you are to repin this pin it from her site please.
CROCK POT CHICKEN PARMESAN
recipe from: Siggy Spice

2-4 boneless, skinless chicken breast halves
1/2 cup Italian Seasoned Bread Crumbs
1/4 cup Parmesan Cheese
1/4 t black pepper
1/4 t kosher salt
1 TBSP olive oil
1 egg, beaten
sliced or shredded mozzarella cheese
favorite jarred marinara sauce

Spread the 1 TBSP of olive oil into the bottom of your crockpot stoneware insert.
Beat the egg with a fork in a separate bowl.
Mix the bread crumbs with the seasonings and the Parmesan cheese in another separate dish.
Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings.
Place the chicken breast pieces in the bottom of the crockpot.
Layer 2-3 slices or 1-2 cups of mozzarella cheese on top, depending on how much cheese you like.
Cover chicken and cheese with entire jar of marinara sauce.

Close lid and cook on low for 6-7 hours or high for 3-4.
Serve with your favorite pasta.

Cheesy Enchilada Stack: Pinterest Recipe (5 stars)

I have decided to start making things that I see on Pinterest.  This way I can know if the recipe is worth pinning or not.  I recently pinned this little dish and thought it looked great but wondered how it would taste and how the family would like it.  Turns out this one was a HUGE success.  It really is very tasty.  The site that I got this recipe from looks to have a lot of great recipes.  The site is Chef in Training.  If you are going to pin this please pin it from her site since it is her recipe. 
CHEESY ENCHILADA STACK 
1 lb. Lean ground beef
2 (10 oz) can Red Enchilada Sauce (Our favorite is the Old El Paso brand)
6 (8 inch) flour tortillas
1 (8 oz) bag Shredded Cheddar Cheese
1 (16 oz) can refried beans 
2 (4 oz) cans diced green chilies
1 bunch green onions
Cook the beef in a skillet over MED-HIGH heat until well browned. Drain off fat.
Stir 1/2 cup enchilada sauce in the skillet with the beef.  Spray a baking sheet with non-stick cooking spray.
Place 1 tortilla onto the baking sheet.  Top with 1/3 of the beef mixture and 1/4 cup cheese.
Top with 1 tortilla, half the refried beans, 1/2 cup enchilada sauce, 1 can drained green chilies, and 1/4 cup cheese.
Repeat the layers one more time.
Top with 1 tortilla, remaining beef mixture and 1/4 cup cheese.
Top with remaining tortilla.  Cover the stack with aluminum foil.
Bake at 400 F for 40 minutes or until the filling is hot.  Uncover the stack and top with remaining enchilada sauce, cheese and green onion.
Bake 5 more minutes or until the cheese is melted.
Cut the stack into 6 wedges.

Pizza Rolls or Calzones

I have been making this recipe for years. In fact it is a Home Economics recipe from High School. Ha, kind of funny. My family has loved this recipe. There is something so yummy about a personal pizza. I hope you enjoy this one as much as we have.
(Not a pretty picture but they are tasty.)
2 cups warm water
2 tsp yeast
4 T honey
2 tsp salt
4 2/3 cups flour
Pizza Sauce of your choice
2-3 cups Cheddar and Mozzarella cheese (or your choice)

In a large mixer add water and yeast.  Let it sit for 5 minutes.  Then add honey, salt and flour one cup at a time.  Mix.  Knead ingredients together for 10 minutes.  After you have done this roll out on a floured surface.  Rub with pizza sauce, sprinkle with cheese of choice, and place pepperonis down.  Preheat oven to 350.  Roll the dough like you would for cinnamon rolls.  I use dental floss to cut mine but you can use a knife.  Cut the pizza rolls about 1-1 1/2 inches thick.  place on a greased cookie sheet and bake at 350 for 25-30 minutes.  Enjoy!


The Calzone version is just as easy and just as tasty. You do it the same way as the rolls just don't slice it.

Lime Cilantro Salmon

I'll have to be honest this is only my second time cooking fish EVER!!!! Yes, I know I'm so unhealthy, crazy, and WHAT!!! I have a husband that is well to put it nicely a food freak. That was nice I promise. He starts to dry heave if you even mention fish. So, I am just a little worried to see what would happen if there was actually fish on the table. When he got home tonight the first thing he said when he closed the garage door was "Something smells fishy." My heart sunk. Then he came up took a look at it and said "...hmm, that smells...good." It made my little heart smile. And after a couple of nervous bits he said "mmm, this tastes pretty good. No, really good." Ahh, sweet SUCCESS!!

1 pound salmon or 4, 6 ounce fillets.  
2 tsp olive oil
1/2 tsp. coriander
coarse salt and ground pepper to taste
Heat grill to medium high, rub the salmon with coarse salt, ground pepper, coriander, and olive oil.  Lightly oil the grill; place salmon skin side UP on the grill.  Cook for 5 minutes.  While cooking make your sauce.  Turn over with a spatula and cook 4 more minutes or until opaque and flaky.  Serve salmon and drizzle with Lime Cilantro sauce.

Sauce
1/4 cup fresh lime juice
2 T soy sauce
3 tsp sugar
1 T Fresh cilantro chopped
Stir all ingredients together except cilanto. Then fold in the cilantro.  Spoon over the salmon. ENJOY

Black Bean Enchilada's

My mom saw this recipe on KSL a few years back and she thought it looked pretty good.  We have fallen in love with this one and it is now a family favorite.  I love enchilada's but this one just taste unique to most that I have had.  It is a fairly easy recipe and I usually have most of the ingredients on hand.

2-3 chicken breasts diced
8 slices of bacon
2 cloves garlic, minced
1 16 oz can black beans
1 red pepper
1 1/2 cup salsa
1 tsp cumin
1/4 tsp salt
1/2 cup green onions, sliced
12 flour tortillas
1 1/2 cup cheddar cheese, shredded

In a large fry pan cook chicken and bacon, add the remaining ingredients except green onion, cheese, and tortillas.  Bring to a boil.  Remove from heat add in the green onion.  Fill the tortillas with the sauce amount to your liking, add cheese.  Roll.  Place in a 9X13 pan.  Bake at 350 degrees for 15 min.  Use the remaining sauce on top.  Place this on after 15 minutes will just a little more cheese.  Cook on broil for about 3 minutes or until the tortillas start to brown.  Serve with lettuce, guacamole, and sour cream.Enjoy.

Sweet and Sour Chicken

Our good friends and us always have a dinner in December. We trade off every year the house we go to. One of the years we went to their house and Jana made the yummiest Sweet and sour chicken. My mom also makes a very scrumptious sweet and sour chicken recipe. The other day I was thinking this sounded like a great idea. That was until I went to make it and I didn't have the right ingredients. I hate when that happens. Luckily for me I had to recipes to go off of and so I tweaked them to make a recipe I had all ingredients for. So in this post you are getting to recipes of Sweet and Sour Chicken. Both of them are tried and true and both are yummy!!
Mom's Recipe:

1/2 Cup flour
1/4 cup cornstarch
1 tsp. salt
1/2 tsp baking powder
1/2 tsp canola oil
1/2 cup water
1/2 cup chicken or pork tenderloin cubed

Mix dry ingrdients then mix with water and oil to make a batter. Dip chicken pieces in batter. Fry in small amount of canola oil.

Jana's Recipe

5 chicken breasts cut up
Marinate in garlic salt

Sauce

1 1/2 cup sugar
1 1/2 cup vinegar
3 T ketchup
2 T soy sauce
1 tsp salt
1/2 cup chicken broth

mix together

roll chicken in corn starch then egg deep fry. Set on paper towel. Dip in sauce place on cookie sheet. Pour remaining sauce over chicken. Bake at 350 30-40- min.

Spaghetti Pie

One of my most favorite dinners of all time is spaghetti.  When our family was just starting out we would make spaghetti and have so much left over.  I was so glad I had this back up option for the leftovers.  Now that our family has grown, we make it as the main meal because we no longer have left over spaghetti.  I have made this for a ton of people and they always say they LOVE it.  It is one of those dinner that seems impressive but is simple to make.  Get ready to please your taste buds with this one.
 I usually make this in a pie dish but now that I make a double recipe I use a 9X13
6 ounces cooked spaghetti
4 T butter
2/3 cup Parmesan cheese
4 eggs
1 medium sized back Mozzarella cheese

Cook spaghetti according to package directions.  While this is cooking in a mixing bowl add butter, Parmesan cheese, and eggs.  Mix.  Grease a pie pan and add a layer of half the cooked spaghetti, then half the Parmesan cheese mixture, then half of the Mozzarella cheese. Repeat.  Bake at 350 degrees for 30 minutes or until the eggs are cooked through.  Serves 6  If you make this in a 9X13 double the recipe.  Top with your favorite spaghetti sauce.  Enjoy.

Macaroni and Cheese

I have made Kraft mac and cheese my entire life. I still do at times, although two of my four kids don't like it. This is still a great stand by, but if you want to serve your family a dinner that you spent time preparing just for them with a hint of thyme to make it more enticing this is a great one. I love the way that the flavors of this just explode in your mouth. It is becoming a dinner that I think about making just because it tastes so yummy.
1/2 tsp. Thyme
5 slices white bread (blended)
3 T butter
1 lb mac noodles (Large elbow)
2 cups chicken broth (4 bullion cubes 2 cups water)
5 T flour
2 cups milk
2 1/4 cups extra sharp cheddar cheese
1/2 cup Parmesan cheese
1 tsp salt
Fry bread crumbs and 2 T butter. Set aside. Cook pasta to Al Dente. Melt 1T butter, thyme, and salt. Whisk flour and milt together. add to pan. Then add Chicken broth. Bring to a boil. While stirring add the cheeses. Reduce to a simmer. Cook for 8 minutes. Put the noodles in a greased 9x13 baking dish. Poor sauce over the top. Sprinkle with bread crumbs. Cook for 30 min at 350. Enjoy

Hawaiian Haystacks

This has been around for a long time so I just assumed everyone knew how to make it. Then my cousin posted on Facebook for people to tell her what they put on theirs. Well it turns out a lot of the comments that she got were "What is Hawaiian Haystacks". This is a family must. It is so easy and every mom should have it in her back up. The best part is you can make it for 2-99. It is such an easy recipe. I hope you enjoy them as much as we do. All the flavors just pop in your mouth. Mmmm goodness!

4-6 cups cooked rice
2 celery ribs
1 green pepper
2-3 green onions
1-2 tomatoes
1 cup shredded carrots
1 small can pineapple tidbits
2 cups grapes halved
1-2 cups cheddar cheese
1/2 cup slivered almonds
1/2 cup coconut
1 cup Chow mien noodles.  

Sauce

1-2 chicken breasts diced
2 TB olive oil
1/2 tsp garlic powder
salt and pepper to taste
1 can cream of chicken soup
1 can of milk
1'2 cup sour cream
1 tsp  Santa Maria Seasoning (optional)

Heat olive oil on medium heat.  add the chicken.  Brown the chicken with garlic powder, salt, and pepper.  Cook until no longer pink, and the skin is just browning.  Add soup, and milk.  Bring to a boil.  Remove from heat and add the sour cream and seasoning. 

Layer the Haystacks
First rice,
cheese
sauce
then add the remaining ingredients to your hearts desire.  The best part is everything on the list can be optional.  Just put on it what you like.  I would never put almonds on mine but I love the grapes.  It is up to you.  Enjoy

Creamy Lasagna

My cousin Calee called me the other day and told me about this yummy recipe she just made. I gave it a shot and it is YUMMY! plus it freezes. I love meals that freeze. We made this for our kids to have while we were out of town. When we got home there was a little left in the fridge and my hubby couldn't get enough. I knew that this needed to become a regular in our home.
Spaghetti Sauce:
1 lb hamburger
1/2 cup chopped yellow onion
1 can tomato sauce
1 can diced tomatoes
1 tsp Oregano
1 tsp Basil
1 tsp Italian Seasoning (optional)
1 small can mushrooms
Brown hamburger and cook onion together. Then add remaining ingredients. Stir. Bring to a boil and simmer for 30 min.

Alfredo Sauce:
3T butter
1/2 pkg. cream cheese
3/4 C Evaporated milk or half & half. (Milk works also)
1 chicken bullion cube
1/3 c Parmesan cheese
garlic salt to taste
pinch of Parsley

Melt butter, cream cheese and milk on low heat. Stir together. Then add bullion. Stir in Parmesan cheese and garlic to taste. You can add more milk if it is too thick.

1/2 lbs. Mostaccioli Noodles
Cook in boiling water until Al Dente about 8-10 minutes,

1 lb Mozzarella cheese

Arrange in a 9 x 13 pan 1/2 of everything in this order: spaghetti sauce, noodles, Alfredo Sauce, mozzarella cheese, repeat. Cook for 45 minutes covered and 15 uncovered. Bake at 350. Enjoy.

Garden Fresh Spaghetti

My good friend Misty gave me this recipe years ago. We got together one afternoon and went through each others recipe boxes.  It was a lot of fun and I got a bunch of new recipes.  This recipe was one of those recipes.    I have looked at it a ton of times but for some reason I never used it.  Now I am wondering why in the world I would do that to myself.  It is so GOOD and refreshing.

I don't know about you but if I have garden tomatoes I always have way more then I can eat.  We have tomatoes sandwiches, fresh salsa, and BLT's but having a recipe that uses 10 at one time makes me feel like I am getting a better use out of my tomatoes.  Really though this is delicious.  I sure hope you don't make the mistake that I made and not use this recipe for years. 

2 T. Olive Oil
1 large yellow onion chopped
1 med clove garlic, minced
3 small carrots, chopped fine
3 celery stalks, chopped fine
1 T. dry parsley
1 T. dry basil
1 T. chicken bullion
1/4 cup water
10 med. tomatoes

Heat oil in a medium sauce pan with lid.  Add onion and garlic.  saute.  Add carrots and celery.  Stir well.  Add parsley and basil.  dd bullion and water.  Cover and simmer over low heat for 15 minutes or until veggies are tender.   Cool to room temp.  Drop tomatoes into boiling water for 30 seconds.  Remove peel, and chop.  Add to sauce serve over noodles or rice.  ( I think you could add meatballs if you wanted.) Enjoy.

Grandma Dorothy's Spectacular Sloppy Joe's

All growing up I had these Sloppy Joe's for dinner. They are the best I have ever had. I use to wonder why people didn't really like Sloppy Joe's until I tried what most people use, from a can. YUCK! They are awful. First off this recipe is so easy so if you ever make Sloppy Joe's from a can again then shame on you. Haha Second, it will change your view on the Joe. They are actually really yummy. My hubby will forever be a changed man thanks to my Grandma and her yummy Sloppy Joe. I am weird and like to put my potato chips inside of it. My oldest does the same thing.
2 pounds ground beef
1 chopped yellow onion
2 T. flour
1 can (8 ounces) tomato sauce
1 T. dry mustard
1 T. brown sugar
1 T. vinegar
4 T. ketchup
3 t. Worcestershire sauce
salt and paprika

Brown the hamburger and onion. Add remaining ingredients and heat through. Serve on a bun. Add chips for fun;) Enjoy!

Pizza Dough

I was at the pool today and my darling neighbor told me that I need to make a new post. I agree with her. It really has been a slow summer. I will try to be better.

I have been making this for about 4 years now. My friend Joy gave me this recipe and it quickly became a family favorite. I love it. My kids love it. I mean really who doesn't love pizza. We were eating it a lot and I had to lay off the breads for awhile so I kind of forgot about it. I love making if for Friday night dinner. The kids always think they are getting a fantastic treat. Plus it is fairly easy. I don't think I say that enough on this blog. It is getting old. Maybe I should come up with more words for easy. It is fairly simple. There that is better. So this pizza is so yummy that I can't even get a picture before my hubby breaks off a piece of crust. I told all the kids to back off and didn't remember to tell him. Who can blame him. It was literally calling his name.
2 cups warm water
1 T. yeast
1/4 cup sugar
1/2 cup melted butter
1/2 tsp salt
1/2 cup milk
About 6 cups of flour
Corn meal for sprinkling pan

Mix water, sugar, and yeast. Allow the yeast to bubble. Then add remaining ingredients. Add one cup of flour at a time. Mix. Add another cup of flour until dough is soft. Allow to rise until doule in size. Roll dough out into a rectangle. Oil the baking sheet and sprinkle corn meal over the oil. Let the dough sit for 10 minutes. Bake at 425 for 15 minutes. Remove from oven and add toppings. Bake until cheese is melted.
This recipe makes 1 baking sheet and 1 9x13 pan/large round pie plate. Enjoy!

pepperoni
mushrooms
sausage
onions
green peppers

Best Burger Ever!

I absolutely love this recipe that I found in Martha Stewart Everyday Foods. I will have to admit I LOVE Martha. Her easy recipe magazine is one of my favorite things ever. It is actually a meatball recipe but who says you always have to follow rules. I thought it might just make a yummy burger and darn it, it is!

I have tested this on very picky eaters,"Men's men", kids, and even women. The consensus is that they all love it.
1 large egg
coarse salt and ground pepper
1 large onion, finely chopped
6 garlic cloves, minced
1/2 cup dried breadcrumbs or oatmeal
3/4 cup finely grated Parmesan cheese
16 ounces hamburger
1 t. Italian seasoning

Mix all ingredients in a large bowl. Roll into balls big enough for a patty and flatten to about 1/2 inch thick. Grill to desired amount.

Toppings for us include green leaf lettuce, tomatoes, purple onion, ketchup, mustard, pickles, mayo(not for me). Toast the bun and enjoy!

Grandma Dorothy's Teriyaki Steak Sandwiches

If you know my family you know we love these sandwiches. These are a must whenever we have company over for a BBQ. My siblings always request this when they are in town. It doesn't look like much but, oh, it is delicious. My mom's side of the family always have these at big get togethers. They remind me of cousins, and having a wonderful time together. There is something so special about playing in the back yard with your family and the smell of the BBQ in the air. Oh, I love it. Seriously though, make these this summer. Try it out and tell me how you like it. My hubby doesn't love the butter on the roll, but I think he is missing out.

Sirloin Tip roast about 5 lbs. cut into thin slices (uncooked) We ask the butcher to cut it as thin as he can without it falling apart.

Marinade:
1/2 cup oil
2 T. Vinegar
1/2 tsp ginger
1/2 cup soy sauce
1 T. minced onion
1/3 tsp garlic powder

Blend the ingredients. Toss with thinly sliced beef and marinate for 24 hours. Cook on grill for about 1 minute on each side until done. Serve on buttered potato rolls. and you will ENJOY (I promise) Serves about 15-20

Best BBQ Chicken

My hubby and I have been trying out new recipes lately. Our newest and probably most favorite find is this delicious chicken from yes, you guest it Martha Stewart. It just looked mouth watering, so we decided to grill these bad boys up. It is probably the BEST chicken I have ever had. It doesn't take long to just add a little extra to spice things up. Mmmmm, Mmmmm good!

2 T paprika
2 T chili powder
2 tsp salt
1/2 tsp pepper
4 Boneless Skinless Chicken Breasts
2 cups Barbecue Sauce

Heat grill to medium, lightly oil grates. In a small bowl combine the paprika, chili powder, salt, and pepper; sprinkle spice rub all over chicken. Reserve 1 cup of the bar-be-cue sauce for serving. Keep remaining sauce in another bowl for basting.

Grill chicken, turning often, until cooked through, 15-20 minutes. During final 5 minutes of cooking, baste chicken with barbecue sauce. Serve chicken with reserved sauce. Enjoy!
